Ingredients
  

  • ½ cup mayonnaise
  • ¼ cup Thai-style sweet chili sauce
  • 3 dashes Sriracha hot chile sauce, to taste
  • ½ cup cornstarch, as needed
  • 1 pound medium shrimp, peeled and deveined
  • Oil for frying
  • 8 lettuce leaves
  • 1 bunch green onion, chopped, to taste

Instructions
 

  • Make the sauce: In a bowl, whisk together the mayonnaise, sweet chili sauce, and Sriracha. Set aside.
  • Prep the shrimp: Pat the shrimp dry with a paper towel, then press them into a shallow bowl of cornstarch, ensuring each is evenly coated. Shake off any excess.
  • Fry the shrimp: Heat oil in a deep skillet or saucepan to 375°F. Fry shrimp in batches for about 3-5 minutes each, until they turn golden and cooked through. Transfer to a plate lined with paper towels to drain any excess oil.
  • Toss in sauce: Place the shrimp in a large bowl, pour the prepared sauce over the top, and gently toss until each piece is coated.
  • Serve: Line a bowl or plate with lettuce leaves, add the sauce-coated shrimp, and sprinkle with chopped green onions. Enjoy immediately!
