Ingredients
  

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups milk
  • 1 large egg yolk, slightly beaten
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1/4 to 1/2 cup shredded cheddar cheese
  • 2 (10-ounce) packages frozen broccoli spears, cooked and drained
  • 1 pound sliced cooked turkey
  • 2 tablespoons grated Parmesan cheese

Instructions
 

  • Melt the butter in a medium saucepan over medium heat, then whisk in the flour. Cook for 1-2 minutes, stirring constantly, until the mixture bubbles lightly.
  • Remove the pan from the heat. In a small bowl, mix the milk with the egg yolk. Gradually whisk this mixture into the saucepan.
  • Return the pan to medium heat and stir in dry mustard, salt, and pepper. Cook while stirring constantly until the sauce thickens and just begins to bubble.
  • Stir in shredded cheddar cheese until fully melted and smooth. Set the cheese sauce aside.
  • In a 2-quart baking dish, layer half the broccoli and turkey slices. Pour over half the cheese sauce. Repeat with a second layer of broccoli, turkey, and cheese sauce.
  • Top the casserole with grated Parmesan cheese and place it under the broiler (set to 500°F) for 3-4 minutes, or until the top is golden brown and bubbly.
  • Remove from the oven, let cool slightly, and serve warm. Enjoy!
