- 2 tablespoons all-purpose flour
- 1 1/4 cups milk
- 1 large egg yolk, slightly beaten
- 1/4 teaspoon dry mustard
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1/4 to 1/2 cup shredded cheddar cheese
- 2 (10-ounce) packages frozen broccoli spears, cooked and drained
- 1 pound sliced cooked turkey
- 2 tablespoons grated Parmesan cheese
Melt the butter in a medium saucepan over medium heat, then whisk in the flour. Cook for 1-2 minutes, stirring constantly, until the mixture bubbles lightly.
Remove the pan from the heat. In a small bowl, mix the milk with the egg yolk. Gradually whisk this mixture into the saucepan.
Return the pan to medium heat and stir in dry mustard, salt, and pepper. Cook while stirring constantly until the sauce thickens and just begins to bubble.
Stir in shredded cheddar cheese until fully melted and smooth. Set the cheese sauce aside.
In a 2-quart baking dish, layer half the broccoli and turkey slices. Pour over half the cheese sauce. Repeat with a second layer of broccoli, turkey, and cheese sauce.
Top the casserole with grated Parmesan cheese and place it under the broiler (set to 500°F) for 3-4 minutes, or until the top is golden brown and bubbly.
Remove from the oven, let cool slightly, and serve warm. Enjoy!
