Ingredients

  • 4 (5 ounce) skinless, boneless chicken breast halves
  • 2 tablespoons olive oil
  • ½ teaspoon coarse sea salt, or to taste
  • 1 pinch Creole seasoning, or to taste
  • 1 tablespoon chicken broth or water

Instructions

  • Preheat your oven to 400°F (200°C).
  • Rub each chicken breast with olive oil, ensuring they are evenly coated. Sprinkle both sides generously with salt and Creole seasoning.
  • Arrange the seasoned chicken breasts on a broiler pan for even heat circulation. If you don’t have a broiler pan, a baking sheet with a wire rack works beautifully too.
  • Bake in the preheated oven for 10 minutes. Flip the chicken breasts, and bake an additional 15 minutes or until the chicken is cooked through. Use a meat thermometer to check the internal temperature—it should hit 165°F (74°C) at the thickest part.
  • Once done, transfer the chicken to a plate to rest for 5 minutes. This step is essential to lock in the juices.
  • While the chicken rests, pour chicken broth into the hot pan and use a wooden spatula to scrape up the flavorful browned bits. Simmer briefly to create a light pan sauce.
  • Drizzle the sauce over the baked chicken breasts and serve!
