  • 1 pound lean ground beef
  • 1 16 ounce can chili beans
  • 1 16 ounce bottle French dressing (or to taste)
  • 1 1.25 ounce package taco seasoning mix
  • 1 14.5 ounce package tortilla chips
  • 1 head iceberg lettuce, shredded
  • 2 cups shredded Cheddar cheese
  • 1 cup chopped tomatoes
  • ½ cup prepared salsa
  • 4 tablespoons sour cream

Instructions
 

  • Cook the beef: Heat a large skillet over medium-high heat. Add the ground beef, cooking and stirring until browned and crumbly, about 5-7 minutes. Drain off any excess grease.
  • Add seasoning and simmer: Stir in the taco seasoning mix, chili beans, and French dressing. Fill the empty dressing bottle about 2/3 full with water and pour it into the skillet. Stir everything together, bring to a boil, then reduce heat and let it simmer for 15 minutes to let the flavors meld.
  • Build the salad base: While the beef mixture simmers, crush the tortilla chips directly in their bag (this is such a fun step!). Toss the crushed chips into a large bowl and mix in the shredded cheese and tomatoes.
  • Assemble: Fill individual serving bowls with shredded lettuce. Spoon the warm meat mixture over the lettuce, then add the crushed chip mixture on top along with salsa and a dollop of sour cream.
  • Serve immediately: Enjoy this colorful, flavorful dish while the beef is warm and the chips are crunchy!
