Slow Cooker Fajitas

Ingredients
  

  • 1 medium green bell pepper cut into 1/2-inch strips
  • 1 medium red bell pepper cut into 1/2-inch strips
  • 1 medium yellow bell pepper cut into 1/2-inch strips
  • 1 sweet onion cut into 1/2-inch strips
  • 2 pounds beef top sirloin steak cut into thin strips
  • 3/4 cup water
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 8 flour tortillas 8 inches, warmed
  • 1/2 cup salsa
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 8 teaspoons fresh cilantro leaves

Instructions
 

  • Layer the sliced peppers and onions in the bottom of a 5-quart slow cooker.
  • Place the thinly sliced beef on top of the vegetables.
  • In a small bowl, whisk together the water, red wine vinegar, lime juice, cumin, chili powder, salt, garlic powder, black pepper, and cayenne pepper. Pour this mixture evenly over the beef.
  • Cover the slow cooker and set it to low. Cook for 8 to 10 hours, until the beef is tender and infused with the savory seasoning.
  • Once done, use a slotted spoon to scoop 3/4 cup of the beef and veggie mixture onto each tortilla.
  • Top with salsa, cheddar cheese, and fresh cilantro. Roll up your fajitas, serve, and enjoy!
