- 1 package (12 ounces) fully cooked Italian chicken sausage links, cut into 1-inch pieces
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1/4 teaspoon crushed red pepper flakes
- 1-1/2 pounds red potatoes (about 5 medium), thinly sliced
- 1 package (10 ounces) frozen corn
- 1/4 teaspoon pepper
- 1-1/4 cups vegetable broth
- 2 cups fresh baby spinach
Heat 1 tablespoon of olive oil in a large 12-inch skillet over medium-high heat. Once hot, add the sausage pieces and chopped onion. Cook for about 5-7 minutes, stirring occasionally, until the sausage is nicely browned and the onions are tender.
Add minced garlic and crushed red pepper flakes to the skillet. Stir for 1 minute until the garlic becomes fragrant.
Layer in the sliced red potatoes, frozen corn, ground pepper, and vegetable broth. Increase the heat to bring the mixture to a boil.
