Ingredients
  

  • 6 slices of sandwich bread white or whole wheat works best
  • 4 large eggs
  • 1/4 cup milk any type—dairy or non-dairy
  • 1/4 cup shredded cheese cheddar, mozzarella, or your favorite
  • 1/4 cup diced cooked sausage
  • 2 tablespoons finely chopped veggies like bell peppers, onions, or spinach
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Non-stick cooking spray or butter for greasing the muffin tin

Step 1: Prepare the bread “cups”

  • Preheat your oven to 375°F (190°C). Lightly grease your muffin tin with cooking spray or butter. Then, take your slices of bread and gently press each one into a muffin cup, forming a bowl shape. Don’t worry if the edges stick up—it gives them that rustic, homemade look we all love.

Step 2: Mix the egg filling

  • In a medium-sized bowl, whisk together the eggs, milk, salt, and pepper until smooth. Stir in the shredded cheese, diced cooked sausage (or your protein of choice), and chopped veggies. This is where you can get creative!

Step 3: Fill the toast cups

  • Carefully spoon the egg mixture into each bread cup, filling them about three-quarters full. The egg will puff up slightly as it bakes, so leave a little room at the top.

Step 4: Bake to perfection

  • Place the muffin tin in the preheated oven and bake for 18–20 minutes, or until the egg filling is set and the bread edges are golden brown. Keep an eye on them toward the end so they don’t overcook.

Step 5: Serve and enjoy

  • Once baked, let the toast cups cool in the tin for 2–3 minutes before gently removing them with a butter knife or small spatula. Serve warm and enjoy!
