Ingredients
  

  • 1 (16 ounce) package dry penne pasta
  • 8 Roma (plum) tomatoes diced
  • 1/2 cup Italian dressing or to taste
  • 1/4 cup finely chopped fresh basil
  • 1/4 cup diced red onion
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Bring a large pot of lightly salted water to a boil. Add the penne and cook for 8-10 minutes, stirring occasionally, until tender but firm to the bite.
  • While the pasta cooks, dice the Roma tomatoes and chop the basil and red onion. Set them aside.
  • Once the pasta is done, drain it well and transfer it to a large serving bowl.
  • Add the diced tomatoes, Italian dressing, chopped basil, red onion, and grated Parmesan cheese to the bowl with the pasta.
  • Toss everything together gently until the pasta is evenly coated and the ingredients are well combined. Taste and adjust with more Italian dressing or salt if needed.
  • Serve immediately or let it sit for a few minutes to allow the flavors to meld. Garnish with additional basil or Parmesan if desired.
