Ingredients
  

  • 2 cups old-fashioned rolled oats for that perfect chewy texture
  • 1 cup semi-sweet chocolate chips or dark chocolate for a richer flavor
  • 1/2 cup peanut butter creamy or crunchy, your choice
  • 1/4 cup unsalted butter
  • 1/4 cup honey or maple syrup for a vegan option
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt to enhance the chocolate flavor

Optional mix-ins:

  • 1/2 cup dried cranberries or raisins for a fruity twist
  • 1/4 cup chopped nuts like almonds or pecans for added crunch
  • 1/4 cup shredded coconut for a tropical flair

Instructions
 

Step 1: Melt the chocolate and peanut butter

  • In a medium saucepan, combine the chocolate chips, peanut butter, unsalted butter, and honey. Heat over low to medium heat, stirring constantly, until the mixture is smooth and glossy. This step only takes a few minutes, so stay close to avoid burning.

Step 2: Add the vanilla and salt

  • Once the chocolate mixture is fully melted, remove it from the heat. Stir in the vanilla extract and salt to balance the sweetness and enhance the overall flavor.

Step 3: Mix in the oats

  • Add the rolled oats to the saucepan, stirring until they’re fully coated in the chocolate mixture. If you’re using any optional mix-ins like dried cranberries or nuts, fold them in at this stage.

Step 4: Shape the clusters

  • Scoop spoonfuls of the mixture onto your parchment-lined baking sheet. You can make them as big or small as you’d like, but I find that about 2 tablespoons per cluster is the perfect size. Use the back of your spoon to gently press them into shape.

Step 5: Let them set

  • Pop the baking sheet into the fridge for at least 30 minutes to let the clusters firm up. Once they’re set, they’re ready to enjoy!
  • Store any leftovers in an airtight container in the fridge for up to a week, if they last that long.
