  • 1 large cucumber thinly sliced (peeled or unpeeled, your choice)
  • ¼ red onion thinly sliced (soak in water 10 minutes to mellow flavor)
  • cup crumbled feta cheese optional, adds creamy tang
  • 2 tablespoons fresh mint or basil leaves chopped (both work great)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Juice of 1 lime about 2 tablespoons
  • Salt and pepper to taste

Step 1: Prep the fruits and veggies

  • Start by slicing your nectarines and cucumber into thin, even slices. You want them thin enough to be fork-friendly but still sturdy enough to hold their shape. Slice the red onion as thinly as you can for a delicate crunch.
