Ingredients
  

  • 5 medium red potatoes
  • 3 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper
  • 6 pieces cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 3 tablespoons chopped chives

Instructions
 

  • Preheat your oven to 425°F and line a baking sheet with parchment paper.
  • Slice the potatoes into ¼-inch-thick rounds. Brush both sides with olive oil and arrange them in a single layer on the prepared baking sheet.
  • Season the slices with salt and pepper. Roast for 15 to 20 minutes, or until the bottoms start to turn golden brown. Flip each slice and roast for another 12 to 15 minutes until crispy and golden on both sides.
  • Remove the tray from the oven. Top each slice with ½ to 1 teaspoon of crumbled bacon and 1 teaspoon of shredded cheddar cheese. Return the tray to the oven and bake for another 6 to 8 minutes, until the cheese is melted and bubbly.
  • Let the chips cool slightly, about 5 to 10 minutes. Finish by garnishing each slice with a dollop (½ teaspoon) of sour cream and a sprinkling (¼ teaspoon) of fresh chives. Serve warm or at room temperature.
