  • 6 ripe nectarines sliced (about 5 cups)
  • 1 tablespoon lemon zest brightens the flavors

  • cup granulated sugar
  • ¼ teaspoon ground cinnamon

For the Crumble Topping:

  • ½ cup rolled oats or substitute with more flour for a no-oats version
  • ½ cup all-purpose flour
  • cup brown sugar light or dark
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup unsalted butter melted

Step 1: Prep the nectarines

  • Preheat your oven to 350°F (175°C). Start by slicing your ripe nectarines into even slices. No need to peel them, the skins soften beautifully when baked and add a touch of color.
  • Toss the slices in a medium bowl with lemon zest, vanilla extract, granulated sugar, and cinnamon. Stir until the nectarines are evenly coated, then pour the mixture into your baking dish. Spread it out in an even layer.

Step 2: Mix the crumble topping

  • In a small bowl, combine the rolled oats, flour, brown sugar, cinnamon, and salt. Stir everything together, then drizzle in the melted butter.
  • Use a fork to mix until the topping forms a crumbly texture. It should resemble wet sand with small clumps.

Step 3: Assemble the crisp

  • Sprinkle the crumble topping evenly over the nectarines in the baking dish. Make sure to cover the fruit completely for that golden, crunchy finish.

Step 4: Bake to perfection
