Instant Pot Lasagna Soup

Ingredients
  

  • 1 4 ounce mild Italian sausage link, casing removed
  • 1 pound ground sirloin
  • 1 tablespoon olive oil
  • 1 cup finely chopped onion
  • 1 tablespoon garlic, minced
  • 1 32 ounce can low-sodium chicken broth
  • 24 ounces marinara sauce
  • 8 lasagna noodles, broken into pieces
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 6 teaspoons grated Parmesan cheese

Instructions
 

  • Turn on your Instant Pot and select the Sauté function. Cook the Italian sausage and ground sirloin until browned, about 5 minutes. Drain any excess grease and set the meat aside.
  • Add olive oil to the pot and swirl to coat. Toss in the chopped onion and sauté until softened, but not browned, about 5 minutes. Stir in the garlic and let it cook for just 1 minute until fragrant.
  • Pour in the chicken broth and deglaze the pot, using a wooden spoon to scrape up any flavorful browned bits stuck to the bottom.
  • Add the marinara sauce, browned meat, salt, and pepper. Stir everything together to combine evenly.
  • Break the lasagna noodles into pieces and submerge them fully in the sauce mixture. Lock the lid in place and set the Instant Pot to high pressure for 3 minutes. It will take about 10-15 minutes for the pressure to build up.
  • Once the cooking is complete, carefully use the quick-release method to release the pressure. This takes about 5 minutes. Remove the lid and give everything a good stir. Taste and adjust the seasoning, adding more salt if needed.
  • Ladle the soup into bowls and top each with a teaspoon of freshly grated Parmesan cheese. Serve immediately and enjoy!
