  • 4 cups fresh broccoli florets chopped into bite-sized pieces
  • 2 large Honeycrisp apples diced (leave the peel on for extra color and crunch)
  • 1/2 cup shredded carrots
  • 1/3 cup dried cranberries or raisins, if you prefer
  • 1/4 cup sunflower seeds hulled and unsalted
  • 1/4 cup red onion finely diced
  • 1/2 cup sharp cheddar cheese cubed or shredded (optional but adds a wonderful creaminess)

For the Dressing

  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey adjust based on your sweetness preference
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions
 

Step 1: Prep the veggies and apples

  • Wash and dry your broccoli thoroughly, then chop it into small, bite-sized florets. Dice the Honeycrisp apples into small cubes, no need to peel them unless you want to. Shred the carrots, dice the red onion, and set everything aside in a large mixing bowl.

Step 2: Make the dressing

  • In a small bowl, whisk together the Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth.
  • Add a pinch of salt and pepper, then taste and adjust the seasoning if needed. The dressing should be slightly tangy and just sweet enough to complement the apples.

Step 3: Combine the ingredients

  • Pour the dressing over the broccoli, apples, carrots, cranberries, sunflower seeds, and red onion. If you’re using cheese, toss that in too. Gently mix everything together until all the ingredients are evenly coated with the dressing.
