Ingredients
  

  • 1 pound lean ground beef
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 3/4 cup milk
  • 1/2 cup chopped onion
  • Salt and ground black pepper to taste
  • 3 cups peeled and thinly sliced potatoes
  • 1 cup shredded Cheddar cheese

Instructions
 

  • Preheat the oven to 350°F (175°C).
  • Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring often, until browned and crumbly (about 5 to 7 minutes). Drain and discard any grease.
  • In a medium bowl, mix the condensed soup, milk, chopped onion, salt, and pepper until fully combined.
  • In a 2-quart baking dish, layer the ingredients in this order: a third of the sliced potatoes, a third of the soup mixture, and a third of the browned ground beef. Repeat the layers twice more, ending with the ground beef on top.
  • Cover the dish tightly with foil and bake in the preheated oven for 1 to 1 1/2 hours, or until the potatoes are tender.
  • Remove the foil, sprinkle shredded Cheddar cheese over the casserole, and return to the oven. Bake for another 5 to 10 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool for a few minutes before serving.

Notes

Leftovers keep well in the fridge for up to 3 days. Reheat individual portions in the microwave or the whole dish in the oven at 350°F for 20 minutes, covered.
