  • 3 cups peeled and thinly sliced potatoes Russet or Yukon Gold potatoes work beautifully here.

Instructions
 

  • Preheat your oven to 350°F (175°C). This ensures everything bakes evenly from the start.
  • In a large skillet, brown the ground beef over medium-high heat, stirring frequently, until it's crumbly and browned (about 5-7 minutes). Drain the grease to keep your casserole from getting soggy.
  • In a medium bowl, combine the condensed soup, milk, chopped onion, salt, and black pepper. Stir until smooth and well blended.
  • In a greased 2-quart baking dish, start with a layer of sliced potatoes, followed by the soup mixture, then the browned ground beef. Repeat the layers until all the ingredients are used up.
  • Cover the dish tightly with foil and bake for 1 to 1 ½ hours, or until the potatoes are tender.
  • Remove the foil, sprinkle the shredded cheddar cheese evenly over the top, and return the dish to the oven. Bake for another 5-10 minutes until the cheese melts and bubbles.
  • Let the casserole cool for a few minutes before serving. Pair it with a fresh green salad or steamed veggies to complete the meal.
