Ground Beef Stroganoff Noodles

Ingredients
  

  • 1 tablespoon unsalted butter
  • 1 tablespoon vegetable oil
  • 1 cup thinly sliced mushrooms
  • 1 teaspoon salt, plus more to taste
  • ½ cup diced onion
  • 1 pound ground beef
  • Freshly ground black pepper
  • 1 pinch cayenne pepper
  • 2 cloves minced garlic
  • 1 ⅓ tablespoons flour
  • 2 ½ cups beef broth, or as needed
  • 1 cup water
  • 2 ½ cups egg noodles
  • ½ cup sour cream, plus more for serving
  • 2 tablespoons fresh sliced chives or green onions

Instructions
 

  • Melt butter and oil in a skillet over medium-high heat. Add mushrooms, sprinkle with salt, and cook until they’re golden brown, about 5-10 minutes.
  • Toss in the onion and ground beef. Cook until the beef is browned and the onions are soft, about 5 minutes. Season with black pepper and cayenne.
  • Stir in the minced garlic and flour, letting it cook for one minute to eliminate the raw flavor from the flour.
  • Pour in beef broth and water, stirring well, and bring to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld.
  • Add the egg noodles, stir to coat, and cover the pan. Let it simmer over medium heat for 5 minutes. Stir again, cover, and cook for another 3-4 minutes until noodles are tender. If the liquid runs low, add more broth as needed.
  • Reduce the heat to low and stir in the sour cream until the sauce is creamy and smooth.
  • Serve hot, garnished with extra sour cream and fresh chives or green onions.
