- 1 pound ground beef
- 1 medium yellow onion diced
- 2 cloves garlic minced
- 4 cups thinly sliced russet or Yukon Gold potatoes about 4 medium potatoes
- 1 can 10.5 oz cream of mushroom soup
- ½ cup milk
- 2 cups shredded cheddar cheese divided
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon smoked paprika optional, for extra flavor
- Nonstick cooking spray
Step 1: Preheat the oven and prepare your baking dish
Step 2: Cook the ground beef and onions
In a large skillet, cook the ground beef over medium heat until browned and fully cooked. Break it up with a spoon as it cooks.
Add the diced onion and garlic, and sauté until the onion is soft and translucent, about 5 minutes. Season with salt, pepper, and smoked paprika if you’re using it. Drain any excess grease and set the mixture aside.
Step 3: Prepare the creamy sauce
Step 4: Layer the casserole
Start by spreading half of the sliced potatoes evenly across the bottom of the prepared baking dish. Sprinkle with a pinch of salt and pepper.
Spread half of the cooked ground beef mixture on top of the potatoes, followed by half of the creamy soup mixture.
Sprinkle 1 cup of shredded cheddar cheese over the top. Repeat the layers with the remaining potatoes, beef mixture, soup mixture, and cheese.
