Ingredients
  

  • 4 slices sourdough bread thick-cut for the best crunch
  • 2 ripe peaches halved and pitted
  • 1 tablespoon olive oil for brushing the peaches and bread
  • 8 oz fresh mozzarella sliced (or use burrata for extra creaminess)
  • A handful of fresh basil leaves torn for a rustic touch
  • 2 tablespoons balsamic glaze store-bought or homemade
  • 1 tablespoon honey optional, for a sweet finish
  • Sea salt and freshly ground black pepper to taste

Instructions
 

Step 1: Grill the peaches

  • Brush the cut sides of your peach halves with olive oil. Heat a grill pan over medium heat or fire up your outdoor grill.
  • Place the peaches cut-side down and grill for 3–4 minutes, or until you see beautiful char marks. Flip them and grill the other side for another 2 minutes. Set them aside to cool slightly, then slice each half into thin wedges.

Step 2: Toast the sourdough

  • While the peaches cool, lightly brush the sourdough slices with olive oil on both sides. Toast them on the grill (or use a toaster oven) for 2–3 minutes per side, until they’re golden and crisp.
  • The goal is to get that crunchy exterior while keeping the inside soft enough to soak up the toppings.

Step 3: Assemble the toasts

  • Lay the toasted sourdough on a flat surface. Start by layering slices of fresh mozzarella on each piece.
  • Next, arrange the grilled peach slices on top, overlapping them slightly for a pretty presentation. Scatter torn basil leaves over the peaches.

Step 4: Add the finishing touches

  • Drizzle each toast with a generous swirl of balsamic glaze. If you’re feeling fancy, add a drizzle of honey for extra sweetness.
  • Sprinkle a pinch of sea salt and a crack of black pepper over everything to bring out the flavors.
