Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 15-ounce cans cannellini beans, rinsed and drained
  • 4 garlic cloves minced
  • 3 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 lemon zested and juiced
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

  • Preheat your oven: Set it to 400°F (200°C) to ensure an evenly cooked dish.
  • Prep your sheet pan: Arrange rinsed and drained white beans on the pan. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and pepper, and mix to coat evenly.
  • Prepare the shrimp: In a bowl, toss the shrimp with 2 tablespoons of olive oil, minced garlic, smoked paprika, red pepper flakes (if using), lemon zest, and a bit of salt and pepper.
  • Assemble: Layer the seasoned shrimp over the white beans on the sheet pan, allowing them to lay in a single layer for even cooking.
  • Bake: Place the sheet pan in the oven and bake for 10-12 minutes, or until the shrimp turn pink and opaque.
  • Finish: Remove from the oven and drizzle with fresh lemon juice. Sprinkle with chopped parsley before serving.
