Ingredients
  

  • 1 1/2 pounds boneless, skinless chicken thighs
  • Kosher salt
  • Ground black pepper
  • 1 large yellow onion, roughly chopped
  • Fresh parsley, chopped
  • 3 teaspoons Dijon mustard
  • 2 teaspoons honey
  • 1/3 cup extra virgin olive oil
  • 6 garlic cloves, minced
  • 1 teaspoon ground coriander
  • 3/4 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • Pinch salt

Instructions
 

  • Preheat the oven:
    Set your oven to 425°F.
  • Season the chicken:
    Pat the chicken thighs dry and sprinkle both sides with salt and black pepper. Let them rest while you prepare the sauce.
  • Mix the sauce:
    In a large bowl, whisk together Dijon mustard, honey, olive oil, minced garlic, coriander, paprika, cayenne pepper (if using), and a pinch of salt.
  • Coat the chicken:
    Using tongs, dip each chicken thigh into the sauce to fully coat it. Transfer the coated thighs to a lightly oiled cast iron skillet or baking sheet. Pour any leftover sauce over the chicken and scatter the chopped onions around it.
  • Bake:
    Slide the skillet into the oven and bake for 25-30 minutes, or until the chicken’s internal temperature reads 165°F on a meat thermometer.
  • Garnish and serve:
    Remove the skillet from the oven, sprinkle with fresh parsley, and serve immediately.
