Cuisine American
- 1 1/2 pounds boneless, skinless chicken thighs
- Kosher salt
- Ground black pepper
- 1 large yellow onion, roughly chopped
- Fresh parsley, chopped
- 3 teaspoons Dijon mustard
- 2 teaspoons honey
- 1/3 cup extra virgin olive oil
- 6 garlic cloves, minced
- 1 teaspoon ground coriander
- 3/4 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper (optional)
- Pinch salt
Preheat the oven:Set your oven to 425°F. Season the chicken:Pat the chicken thighs dry and sprinkle both sides with salt and black pepper. Let them rest while you prepare the sauce. Mix the sauce:In a large bowl, whisk together Dijon mustard, honey, olive oil, minced garlic, coriander, paprika, cayenne pepper (if using), and a pinch of salt. Coat the chicken:Using tongs, dip each chicken thigh into the sauce to fully coat it. Transfer the coated thighs to a lightly oiled cast iron skillet or baking sheet. Pour any leftover sauce over the chicken and scatter the chopped onions around it. Bake:Slide the skillet into the oven and bake for 25-30 minutes, or until the chicken’s internal temperature reads 165°F on a meat thermometer. Garnish and serve:Remove the skillet from the oven, sprinkle with fresh parsley, and serve immediately.
