Ingredients
  

  • 3 pounds red potatoes, cut into 1/2-inch cubes
  • 2 packages (12 ounces each) smoked sausage links, cut into 1/2-inch slices
  • 4 bacon strips cooked and crumbled
  • 1 medium onion, chopped
  • 2 tablespoons chopped fresh parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • Additional chopped fresh parsley, optional

Instructions
 

  • Prepare your campfire or preheat a grill to medium heat (about 375°F). If you're using an oven, preheat it to 400°F.
  • In a large bowl, combine potatoes, sausage slices, crumbled bacon, chopped onion, parsley, salt, garlic salt, and pepper. Toss everything together until evenly coated.
  • Cut eight pieces of 18x12-inch heavy-duty aluminum foil. If you're using regular foil, double up to prevent tearing. Place the food on the dull side for better heat distribution.
  • Evenly divide the potato mixture among the foil pieces. Fold each piece into a secure packet, sealing edges tightly to trap steam.
  • Place the packets directly on the campfire grate, grill, or oven rack. Cook for 15 minutes on one side, then flip and cook for another 15 minutes. The potatoes should be fork-tender.
  • Carefully open each packet (watch out for hot steam!) and sprinkle with additional parsley if desired. Serve immediately and enjoy!
