Equipment

  • Large skillet
  • Wooden spoon

Ingredients

  • 1 pound ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 2 cups shredded Mexican cheese blend
  • 4 large flour tortillas
  • 1 tablespoon vegetable oil (for pan frying)

Instructions

  • Cook the beef: Heat a skillet over medium heat and add the ground beef. Break it up with a wooden spoon and cook until browned, about 7-8 minutes. Drain any excess fat.
  • Season the beef: Stir in chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook for an additional 2 minutes to let the flavors meld together. Set the beef aside.
  • Assemble the quesadillas: Lay one tortilla flat and sprinkle half of it with 1/2 cup of cheese. Add a layer of seasoned beef, then top with another 1/2 cup of cheese. Fold the tortilla in half to cover the filling.
  • Toast the quesadillas: Heat a large non-stick skillet over medium heat. Add a small amount of oil, then place the folded quesadilla in the pan. Cook for 2-3 minutes on each side, or until the tortilla is golden and crispy.
  • Serve: Slice the quesadillas into wedges and serve warm with your favorite toppings like sour cream, guacamole, or salsa.

Notes

Want to meal-prep? Make the beef filling ahead of time and refrigerate until ready to use. Leftovers? Store quesadilla slices in an airtight container in the fridge for up to 3 days. Reheat in a skillet for that crispy texture!
