  • 1 large cucumber sliced into even rounds
  • 8 ounces cream cheese softened to room temperature
  • 1 tablespoon fresh dill finely chopped (or 1 teaspoon dried dill)
  • 1 clove garlic minced (optional for extra flavor)
  • 1-2 teaspoons lemon juice freshly squeezed
  • Salt and pepper to taste

Optional toppings:

  • Cherry tomatoes smoked salmon, or baby carrots (thinly sliced)

Instructions
 

Prepare the cucumber

  • Wash the cucumber thoroughly and pat it dry. Slice it into even rounds, about 1/4 inch thick. For extra presentation points, you can peel stripes into the cucumber’s skin with a vegetable peeler before slicing.

Make the cream cheese mixture

  • In a medium bowl, mix the softened cream cheese with dill, garlic (if using), lemon juice, salt, and pepper. Stir until smooth and well combined. If you want an ultra-creamy texture, you can whip the mixture with a hand mixer for a few seconds.

Assemble the bites

  • Lay the cucumber slices on a serving platter. Use a piping bag or a small spoon to dollop or swirl the cream cheese mixture onto each slice.
  • For a fun twist, you could add a thin slice of baby carrot or a halved cherry tomato on top for extra color and crunch.

Serve immediately

  • These refreshing snacks are best served fresh. If you’re prepping them ahead of time, keep the assembled bites covered in the fridge for up to an hour.
