- ¾ cup puffed quinoa
- ½ cup crunchy natural peanut butter
- ¼ cup semisweet chocolate chips
- Pinch flaky salt (optional)
Line a small baking sheet with parchment paper to prevent sticking and easy cleanup.
In a medium bowl, combine ¾ cup puffed quinoa and ½ cup natural peanut butter. Mix well until the quinoa is evenly coated and holds together.
Scoop out 12 rounded tablespoons of the mixture and roll them into balls using your hands. Place each ball on the prepared baking sheet.
Melt ¼ cup semisweet chocolate chips in a small, microwave-safe bowl. Heat on high in 30-second intervals, stirring thoroughly in between, until fully smooth.
Drizzle about 1 teaspoon of melted chocolate over each ball, letting the chocolate set naturally. For an extra touch, sprinkle each ball with a pinch of flaky salt (if desired).
Transfer the baking sheet to the freezer and freeze for approximately 30 minutes, or until the balls are firm and the chocolate drizzle is completely set.
