  • ¾ cup puffed quinoa
  • ½ cup crunchy natural peanut butter
  • ¼ cup semisweet chocolate chips
  • Pinch flaky salt (optional)

  • Line a small baking sheet with parchment paper to prevent sticking and easy cleanup.
  • In a medium bowl, combine ¾ cup puffed quinoa and ½ cup natural peanut butter. Mix well until the quinoa is evenly coated and holds together.
  • Scoop out 12 rounded tablespoons of the mixture and roll them into balls using your hands. Place each ball on the prepared baking sheet.
  • Melt ¼ cup semisweet chocolate chips in a small, microwave-safe bowl. Heat on high in 30-second intervals, stirring thoroughly in between, until fully smooth.
  • Drizzle about 1 teaspoon of melted chocolate over each ball, letting the chocolate set naturally. For an extra touch, sprinkle each ball with a pinch of flaky salt (if desired).
  • Transfer the baking sheet to the freezer and freeze for approximately 30 minutes, or until the balls are firm and the chocolate drizzle is completely set.
