Ingredients
  

  • 4 thin-sliced chicken breasts about 1 lb total
  • cups panko breadcrumbs
  • ¾ cup grated Parmesan cheese
  • cup all-purpose flour
  • 1 tsp salt plus more for seasoning chicken
  • ½ tsp pepper plus more for seasoning chicken
  • 3 eggs
  • ¼ cup oil

Instructions
 

  • Pat the chicken breasts dry with a paper towel and season both sides with salt and pepper.
  • In a shallow bowl, combine the panko breadcrumbs, grated Parmesan, flour, salt, and pepper. Mix well.
  • In a separate shallow bowl, whisk the eggs until smooth.
  • Working with one chicken breast at a time, coat it in the breadcrumb mixture, then dip it into the egg mixture, and finally press it back into the breadcrumb mixture. Use your hands to firmly press the coating onto the chicken for best results.
  • Repeat with the remaining chicken breasts. Let the coated chicken rest for 10 minutes before frying. This helps the breading adhere better.
  • Heat the oil in a large skillet over medium heat. When the oil is hot, place 1-2 chicken breasts in the pan (don’t overcrowd). Cook for 3-4 minutes per side until golden and crispy, ensuring the internal temperature reaches 165°F.
  • Transfer cooked chicken to a paper-towel-lined plate to absorb excess oil. Serve warm!
