Ingredients
  

  • 2 tablespoons mayonnaise
  • 2 teaspoons Sriracha
  • 1/2 cup shredded pepper Jack cheese
  • 1 small green onion, chopped
  • 6 large hard-boiled eggs, peeled and chopped
  • Salt and freshly ground black pepper to taste
  • Cooking spray
  • 4 hamburger buns
  • 1 small avocado, sliced

Instructions
 

  • In a medium-sized mixing bowl, whisk together the mayonnaise, Sriracha, shredded pepper Jack cheese, and chopped green onion until smooth.
  • Fold in the chopped eggs gently to coat them evenly. Season with salt and pepper to your liking.
  • Heat a large nonstick skillet over medium-high heat and lightly coat it with cooking spray.
  • Scoop about 1/4 of the egg mixture into the skillet and gently press it into a patty shape with a spatula.
  • Cook the patty for 1 minute, allowing the edges to crisp up beautifully.
  • Carefully flip the patty and cook for 1 more minute until golden on both sides. Transfer to a plate and repeat with the remaining mixture.
  • Toast the hamburger buns lightly if desired and layer each one with crispy egg patties and fresh avocado slices.
  • Serve immediately and enjoy warm!
