Instructions
In a medium-sized mixing bowl, whisk together the mayonnaise, Sriracha, shredded pepper Jack cheese, and chopped green onion until smooth.
Fold in the chopped eggs gently to coat them evenly. Season with salt and pepper to your liking.
Heat a large nonstick skillet over medium-high heat and lightly coat it with cooking spray.
Scoop about 1/4 of the egg mixture into the skillet and gently press it into a patty shape with a spatula.
Cook the patty for 1 minute, allowing the edges to crisp up beautifully.
Carefully flip the patty and cook for 1 more minute until golden on both sides. Transfer to a plate and repeat with the remaining mixture.
Toast the hamburger buns lightly if desired and layer each one with crispy egg patties and fresh avocado slices.
Serve immediately and enjoy warm!
