For the crust:
- 1 ½ cups chocolate cookie crumbs about 20 chocolate sandwich cookies, crushed
- ¼ cup unsalted butter melted
For the filling:
- ½ cup unsalted butter
- 1 cup granulated sugar
- ¾ cup unsweetened cocoa powder
- ½ teaspoon salt
- 3 large eggs
- ¾ cup heavy cream
- 1 teaspoon vanilla extract
- For the topping:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Optional:
- Chocolate syrup chopped nuts, or mini marshmallows for garnish
Make the crust
Start by preheating your oven to 350°F. Combine the chocolate cookie crumbs and melted butter in a bowl, mixing until the crumbs are evenly coated.
Press the mixture firmly into the bottom and sides of your pie pan to form a crust. Bake for 10 minutes, then set it aside to cool.
Prepare the chocolate filling
In a medium saucepan, melt the butter over low heat. Stir in the sugar, cocoa powder, and salt until smooth. Remove from heat and let it cool slightly.
Whisk in the eggs, one at a time, followed by the heavy cream and vanilla extract. Pour the filling into the prepared crust.
