Ingredients
  

  • 1 ½ cups finely grated sharp cheddar cheese
  • 1 ½ cups finely grated Monterey Jack cheese
  • ¾ cup mayonnaise
  • cup diced pickled jalapeños
  • cup diced red pepper
  • ¼ cup diced scallions
  • 2 tablespoons chopped cilantro
  • 2 tablespoons freshly squeezed lime juice
  • Kosher salt and pepper, to taste
  • Tortilla chips (for serving)
  • Chili lime seasoning (for serving)

Instructions
 

  • In a medium-sized mixing bowl, combine the grated cheeses, mayonnaise, diced pickled jalapeños, red pepper, scallions, and cilantro.
  • Add the lime juice, followed by a generous pinch of kosher salt and freshly cracked pepper. Stir everything together until fully mixed.
  • Once combined, cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to let the flavors meld.
  • When ready to serve, let the dip sit at room temperature for about 15 minutes to soften slightly, making it easier to scoop.
  • Transfer to a serving bowl and sprinkle with chili lime seasoning for an extra pop of flavor. Serve with tortilla chips, crackers, pretzels, or veggie sticks.
