Cuisine Italian
- 4 ounces boneless skinless chicken breast halves (4 ounces each)
- 1/4 teaspoon pepper
- 8 fresh basil leaves
- 4 thin slices prosciutto
- 4 slices provolone cheese
Sprinkle the chicken breasts evenly with pepper for a simple, flavorful seasoning.
Heat a large skillet over medium heat and lightly coat it with cooking spray. Add the chicken breasts and cook for 4–5 minutes on each side, or until an internal thermometer reads 165°F.
Once cooked, transfer the chicken to an ungreased baking sheet. Top each piece with two fresh basil leaves, a slice of prosciutto, and a slice of provolone cheese.
Place the baking sheet under the broiler, about 6–8 inches from the heat. Broil for 1–2 minutes, or until the cheese is melted and bubbling. Keep a close watch to avoid over-browning.
Remove from the oven and serve immediately. Pair with roasted vegetables or crusty garlic bread for a complete meal.
