Chicken and Herb Dumplings

Ingredients
  

  • 3 tablespoons vegetable shortening
  • 1 cup all-purpose baking mix
  • 2 teaspoons salt
  • 1 teaspoon paprika
  • 1/8 teaspoon ground black pepper
  • 2 1/2 pounds bone-in chicken parts
  • 2 (10.5 ounce) cans cream of chicken soup, undiluted
  • 3 cups milk
  • 2 cups all-purpose baking mix For the dumplings
  • 2/3 cup milk For the dumplings
  • 1/2 teaspoon dried parsley For the dumplings
  • 1/4 teaspoon poultry seasoning For the dumplings

Instructions
 

  • Heat the vegetable shortening in a large skillet over medium-high heat. In a medium bowl, mix 1 cup of baking mix with the salt, paprika, and pepper. Coat the chicken pieces in the mixture and fry them in the skillet, turning occasionally, until golden brown on all sides. Remove the chicken and place on paper towels to drain.
  • Wipe out the skillet to remove any excess fat. Return it to the stove and stir together the cream of chicken soup and 3 cups of milk. Heat this mixture until it begins to boil gently.
  • Add the browned chicken pieces to the skillet, ensuring they are covered by the gravy. Reduce the heat to low, cover the skillet, and let everything simmer for 45 minutes. Turn the chicken occasionally to ensure even cooking.
  • While the chicken is simmering, combine 2 cups of baking mix with 2/3 cup of milk, parsley, and poultry seasoning in a medium bowl. Stir until a soft dough forms.
  • After the chicken has cooked for 45 minutes, drop spoonfuls of the dumpling dough directly into the simmering gravy. Cook uncovered for 10 minutes, then cover and cook for an additional 10 minutes. The dumplings will puff up as they cook.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. Reheat gently with extra milk or water if needed, or freeze for up to 3 months.
