Ingredients
  

For the Bars:

  • 1 cup unsalted butter softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract adds irresistible cherry-almond flavor
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 21-ounce can cherry pie filling

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk adjust for consistency
  • ½ teaspoon vanilla extract

Instructions
 

Step 1: Prepare the shortbread crust

  • Preheat your oven to 350°F and line your baking dish with parchment paper, leaving some overhang for easy lifting later.
  • In a large bowl, cream the softened butter and sugar together until light and fluffy. Add the eggs, one at a time, mixing well after each. Stir in the vanilla and almond extracts.

Step 2: Mix the dry ingredients

  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

Step 3: Assemble the bars

  • Spread about two-thirds of the dough into the prepared pan, pressing it into an even layer. Spoon the cherry pie filling over the crust, spreading it gently to cover.
  • For the top layer, drop small spoonfuls of the remaining dough over the cherries. It’s okay if it doesn’t completely cover the filling—those little gaps let the cherries peek through beautifully.

Step 4: Bake until golden

  • Bake the bars in the preheated oven for 35–40 minutes, or until the top is lightly golden and the edges are set. The aroma of those cherries baking with the buttery crust is absolutely heavenly!

Step 5: Make the vanilla glaze

  • While the bars cool, whisk together the powdered sugar, milk, and vanilla extract to create a smooth glaze. Once the bars are completely cooled, drizzle the glaze over the top for that finishing touch.

Step 6: Slice and serve

  • Carefully lift the bars out of the pan using the parchment paper. Slice into squares or rectangular bars, and they’re ready to enjoy! These are perfect with a cup of coffee or as a sweet ending to any meal.
