Ingredients
  

  • 1 pound Italian turkey sausage, casings removed
  • 2 cups chopped onions
  • 2 cups sliced fresh mushrooms
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (15-ounce) can tomato sauce
  • 1 (14.5-ounce) can Italian-seasoned diced tomatoes
  • 1 cup uncooked mafalda pasta
  • 2 cups chopped fresh spinach
  • 1 cup shredded mozzarella cheese
  • ¼ cup Parmesan cheese
  • 4 teaspoons thinly sliced fresh basil

Instructions
 

  • In a large pot, brown the Italian turkey sausage over medium heat, breaking it into crumbles with a wooden spoon as it cooks. This should take about 5 minutes.
  • Add the chopped onions, sliced mushrooms, and minced garlic to the pot. Sauté everything together until the onions are softened and the mushrooms are lightly browned, about 5 minutes.
  • Pour in the chicken broth, tomato sauce, and diced tomatoes (with their juices). Stir to combine and bring the mixture to a boil.
  • Once the soup is boiling, stir in the uncooked mafalda pasta. Turn the heat down to a simmer and cook for 10 minutes, stirring occasionally, until the pasta is nearly tender.
  • Stir in the chopped spinach, shredded mozzarella cheese, and grated Parmesan cheese. Let the soup simmer for another 2 minutes, allowing the spinach to wilt and the cheese to melt into the broth.
  • Remove the pot from the heat. Add the fresh basil, give it one last stir, and let the soup sit for 2 minutes to allow the flavors to meld together.

Pro Tip: When selecting ingredients, don’t skimp on the cheese quality! Freshly shredded mozzarella and Parmesan off the block melt better and pack more flavor than pre-shredded options.
