Ingredients
  

  • 1 pound Italian sausage cooked
  • 1 yellow onion chopped and sautéed in sausage grease
  • 7 large eggs
  • 1/2 cup milk
  • 20 ounce bag frozen diced hash browns No need to thaw
  • 8 ounce brick mild cheddar cheese grated
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 350°F. While it’s heating, lightly spray a 9x13-inch casserole dish with non-stick cooking spray. Set aside.
  • Cook the sausage and onions. In a skillet, cook the Italian sausage over medium heat until browned. Add the chopped yellow onion and sauté in the sausage grease until the onion is fragrant and softened. Set aside to cool slightly.
  • Combine the ingredients. In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in the cooked sausage and onions, diced hash browns, and most of the grated cheddar cheese (reserving about 1 cup for later).
  • Assemble the casserole. Pour the mixture into the prepared casserole dish and spread it evenly.
  • Bake the casserole. Place the dish in the preheated oven and bake for 35 minutes.
  • Add the remaining cheese. Remove the casserole from the oven, sprinkle the reserved cheese on top, and return it to the oven for another 8 minutes until melted and bubbly.
  • Let it rest. Remove from the oven and allow the casserole to rest for 15–20 minutes before serving. This helps it set and makes slicing easier.

Notes

This recipe is endlessly customizable—swap the sausage for your favorite protein, add veggies like bell peppers or spinach, or experiment with cheeses like Monterey Jack or Pepper Jack for a unique twist. It also reheats beautifully for leftovers.
