Cheesy Corn Toast

- 1¼ teaspoon Oil
- 3 tablespoons Onion finely chopped
- ½ cup Red Bell Pepper finely chopped
- ½ cup Yellow Bell Pepper finely chopped
- 1 cup Corn
- 1 teaspoon Lemon Juice
- 3 tablespoons Cilantro Leaves chopped
- 1 cup Shredded Mexican Cheese
- 1 cup Low-Fat Shredded Mozzarella Cheese
- 1 Green Chili or Serrano Pepper sliced
- ½ teaspoon Red Chili Flakes
- ¼ teaspoon Black Pepper
- ½ teaspoon Chaat Masala
- ¼ teaspoon Cumin Powder
- Salt to taste
- 6 slices Sourdough Bread
- 1 tablespoon Butter for spreading
Heat oil in a skillet over medium heat, then add chopped onions. Sauté until softened and translucent, about 2 minutes. Let them cool.
In a large mixing bowl, combine the sautéed onions with corn, bell peppers, cilantro, spices, lemon juice, and cheese. Mix until well incorporated.
Brush both sides of each sourdough slice with butter. Place the slices in your air fryer and toast at 350°F for 2–3 minutes, or until lightly golden.
Spread 3 tablespoons of the corn mixture onto each toasted slice. Top with additional cilantro and sliced green chili for extra flavor.
Place the loaded slices back into the air fryer. Cover them loosely with foil and toast at 325°F for 1–2 minutes, or until the cheese becomes bubbly and melty.
Serve immediately with your favorite dip, like tomato sauce or a spicy chutney!
