Ingredients

  • 2 large flour tortillas burrito size works great
  • 1 cup shredded cheese cheddar, Monterey Jack, or a Mexican blend are all fantastic options
  • 1 tablespoon butter or cooking spray for greasing the pan

Optional:

  • Salsa sour cream, or guacamole for serving

Instructions

Step 1: Heat the pan

  • Place a large nonstick skillet over medium heat. Add a small amount of butter or spray the pan lightly with cooking spray. This helps the tortilla crisp up beautifully without sticking.

Step 2: Assemble the quesadilla

  • Lay one tortilla flat in the skillet. Sprinkle an even layer of shredded cheese over the tortilla, leaving a small border around the edges.
  • If you’re adding any extras (like cooked chicken or veggies), now’s the time to layer them on top of the cheese. Place the second tortilla on top and press down gently.

Step 3: Cook until golden

  • Let the quesadilla cook for 2–3 minutes on the first side, or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a large spatula.
  • Cook for another 2–3 minutes on the other side until the cheese is fully melted and the second tortilla is golden.

Step 4: Slice and serve

  • Remove the quesadilla from the skillet and transfer it to a cutting board. Let it cool for about a minute before slicing into wedges. Serve with your favorite dips like salsa, sour cream, or guacamole.
  • Enjoy every cheesy, crispy bite!
