Ingredients
  

  • 1 medium head cauliflower cut into bite-sized florets
  • ½ cup all-purpose flour
  • ½ cup unsweetened almond milk or regular milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • Salt & pepper to taste
  • 1 cup panko breadcrumbs for extra crunch
  • ½ cup buffalo sauce store-bought or homemade
  • 2 tbsp unsalted butter melted (optional, for a richer sauce)

Optional tools:

  • parchment paper for easy cleanup and a large baking sheet

Instructions
 

Preheat the oven

  • Start by preheating your oven to 450°F. Line a large baking sheet with parchment paper to prevent sticking and make cleanup a breeze.

Prepare the batter

  • In a medium bowl, whisk together the flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and pepper until you have a smooth batter. It should be thick enough to coat the cauliflower evenly without dripping off.

Coat the cauliflower

  • Dip each cauliflower floret into the batter, making sure it’s fully coated. Let any excess batter drip off, then roll the floret in the panko breadcrumbs for that crispy texture. Place the coated florets on the prepared baking sheet in a single layer, ensuring they aren’t touching.

Bake to golden perfection

  • Bake the cauliflower for 20 minutes, flipping halfway through to ensure even crispiness. The florets should be golden brown and crunchy on the outside.

Toss in buffalo sauce

  • While the cauliflower bakes, warm the buffalo sauce in a small saucepan over low heat. If you prefer a slightly richer flavor, stir in the melted butter.
  • Once the cauliflower is done, transfer it to a large bowl and toss with the warm buffalo sauce until evenly coated.

Serve and enjoy

  • Return the sauced cauliflower to the baking sheet and bake for an additional 5 minutes to set the sauce. Serve hot with your favorite dipping sauce and enjoy!
