Ingredients
  

  • 1/2 cup packed brown sugar
  • 1/2 cup ketchup
  • 1 1/2 pounds lean ground beef
  • 2 large eggs
  • 1 small onion, chopped
  • 3/4 cup milk
  • 3/4 cup finely crushed saltine cracker crumbs
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground ginger
  • Cooking spray

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a 5x9-inch loaf pan with cooking spray.
  • Press the brown sugar into the bottom of the prepared pan, creating an even layer. Spread the ketchup over the brown sugar.
  • In a large mixing bowl, combine the ground beef, eggs, chopped onion, milk, crushed saltine crackers, salt, black pepper, and ground ginger. Mix gently with your hands or a wooden spoon until just combined. Avoid over-mixing, as this can make the meatloaf dense.
  • Shape the mixture into a loaf and place it on top of the ketchup and sugar layer in the pan.
  • Bake for 1 hour or until the juices run clear and the internal temperature reaches 160°F (71°C) on a meat thermometer.
  • Let the meatloaf rest for 5-10 minutes before slicing. This helps lock in the juices for a perfectly moist slice.
