Blueberry Energy Balls

Ingredients
  

  • 1 cup plus 2 tablespoons unsweetened dried blueberries, divided
  • ¾ cup old-fashioned rolled oats
  • ¾ cup smooth natural almond butter or sunflower seed butter
  • ½ cup chopped dried figs
  • ½ cup chopped pecans, toasted
  • 3 tablespoons chia seeds
  • 2 tablespoons honey
  • teaspoons vanilla extract
  • ¾ teaspoon ground cinnamon
  • teaspoon salt
  • ¼ cup white chocolate chips

Instructions
 

  • Finely chop 2 tablespoons of the dried blueberries and set them aside.
  • In a food processor, combine the remaining 1 cup blueberries, oats, almond butter (or sunflower seed butter), figs, pecans, chia seeds, honey, vanilla, cinnamon, and salt. Pulse 10 to 20 times, until finely chopped, then process for about 1 minute until the mixture is crumbly but sticky enough to form into balls.
  • Using wet hands, scoop about 1 tablespoon of the mixture at a time and roll into 32 balls. Place them on a parchment-lined baking sheet.
  • Melt the white chocolate chips in a microwave-safe bowl, heating in 30-second intervals and stirring in between until smooth.
  • Drizzle the melted chocolate over the energy balls and sprinkle with the reserved chopped blueberries.
