Ingredients
  

  • ½ cup unsweetened coconut milk beverage
  • ½ cup old-fashioned oats
  • ½ tablespoon chia seeds (optional)
  • ½ banana mashed
  • 1 teaspoon maple syrup
  • Pinch of salt
  • ½ cup fresh blueberries
  • 1 tablespoon unsweetened flaked coconut (optional)

Instructions
 

  • In a pint-sized jar or airtight container, combine the coconut milk, oats, chia seeds (if using), mashed banana, maple syrup, and salt. Stir well to mix everything thoroughly.
  • Add the blueberries on top and sprinkle with flaked coconut, if desired.
  • Cover the container with a lid and refrigerate overnight (at least 6 hours).
  • In the morning, stir to combine or leave as layers. Enjoy straight from the jar or serve in a bowl!
