Ingredients
  

  • 1 ½ cups graham cracker crumbs about 12 full crackers
  • 6 tablespoons unsalted butter melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese softened (room temperature works best for creamy results)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups heavy whipping cream cold
  • 2 medium ripe peaches sliced thinly
  • 1 cup mixed summer berries like strawberries, blueberries, and raspberries
  • Optional: 2 tablespoons peach or apricot jam warmed (for a shiny finish)

Instructions
 

Step 1: Make the crust

  • Combine the graham cracker crumbs, melted butter, and granulated sugar in a bowl. Stir until the mixture feels like wet sand and holds together when pressed.
  • Press this mixture evenly into the bottom of your springform pan, making sure it’s firm and even. Chill the crust in the fridge while you prepare the filling.

Step 2: Whip the cream

  • In a large mixing bowl, beat the cold heavy whipping cream until stiff peaks form. This will help the cheesecake filling stay light and fluffy. Set the whipped cream aside for later.

Step 3: Prepare the cheesecake filling

  • In another bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, then mix until everything is creamy and well combined.
  • Gently fold in the whipped cream, a little at a time, until the filling is smooth and airy.

Step 4: Assemble the cheesecake

  • Spread the cheesecake filling evenly over the chilled crust. Smooth the top with a spatula for a clean finish. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until the cheesecake is fully set.

Step 5: Add the fruit topping

  • Once the cheesecake is set, it’s time to decorate. Arrange the peach slices and berries on top in any pattern you like.
  • For an extra touch, brush the fruit with warmed peach or apricot jam. This gives the topping a glossy, bakery-style look!

Step 6: Serve and enjoy
