Ingredients
  

  • 2 cups steamed broccoli florets finely chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs or panko use gluten-free if needed
  • 2 large eggs lightly beaten
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • Cooking spray or olive oil for greasing

Step 1: Preheat and Prep

  • Preheat your oven to 375°F. Line a baking sheet with parchment paper or a silicone baking mat, then lightly grease it with cooking spray or olive oil. This will help your broccoli balls bake up golden and crispy without sticking.

Step 2: Mix the Broccoli and Cheese

  • In a large mixing bowl, combine the finely chopped steamed broccoli, shredded cheddar, Parmesan cheese, and breadcrumbs. Stir until the mixture is evenly combined.

Step 3: Add the Binder

  • Add the beaten eggs, garlic powder, salt, and pepper to the broccoli and cheese mixture. Mix everything together until it forms a sticky dough-like consistency.
  • If the mixture feels too wet, sprinkle in a little more breadcrumbs; if it feels too dry, add a small splash of water.

Step 4: Shape the Balls

  • Using your hands or a small cookie scoop, form the mixture into 1-inch balls. Place each ball onto the prepared baking sheet, leaving a bit of space between them so they bake evenly.

Step 5: Bake to Perfection

  • Bake in the preheated oven for 20–25 minutes, or until the cheese balls are golden brown and crispy on the outside. Flip them halfway through baking to ensure even browning.

Step 6: Cool and Serve

  • Once baked, let the broccoli cheese balls cool on the baking sheet for a few minutes before serving. They taste amazing while warm, with gooey cheese and crispy edges.
