Ingredients
  

  • ¾ cup Medjool dates, pitted and chopped
  • ½ cup rolled oats
  • ½ cup chopped dried apples
  • ½ cup unsweetened almond butter
  • ¼ cup chopped pecans, toasted
  • 1 tablespoon ground cinnamon

Instructions
 

  • Soak the dates: Place ¾ cup Medjool dates in a small bowl and cover with hot water. Let sit for 5–10 minutes, then drain thoroughly.
  • Blend ingredients: In a food processor, combine the soaked dates, ½ cup rolled oats, ½ cup chopped dried apples, ½ cup almond butter, ¼ cup toasted pecans, and 1 tablespoon ground cinnamon. Pulse until the mixture is finely chopped and starts to clump together.
  • Shape the balls: Roll the mixture into 12 balls, about 2 tablespoons each. If the mixture feels sticky, wet your hands slightly to make rolling easier.
  • Chill before enjoying: Transfer the energy balls to a plate or airtight container and refrigerate for at least 15 minutes to set. They’re ready to eat!

Notes

These keep well in an airtight container in the fridge for up to a week or in the freezer for up to a month.
